This recommendation comes from a Texan who knows her Mexican food, and this is the only fajita recipe she will make. She recommends marinating it for 24 hours and pairing it with Trader Joe’s “Handmade Flour Tortillas” - “the closest you’ll get to homemade without doing it yourself.”

So many flavors and textures pair perfectly in each bite; truly a feast for the senses.

(Helpful tip: I’d recommend cutting the scallops in half horizontally before grilling; a thinner scallop helps to not overpower the other flavors.)
